Marinating the Turkey

To enhance the taste and tenderness of the Thanksgiving turkey, many people place the meat in a marinade before cooking. Marinating is a technique in which a spiced liquid soaks the bird, penetrating the meat to add flavor. Marinades can contain a variety of herbs, spices, and acids, such as lemon juice, wine, or vinegar.
