Black Bean Pork Chops

Description:
This is delicious meal that even my three-year-old will eat! The combo of pork and black bean salsa makes for a unique and pleasing flavor. Add rice and green beans and you have a complete dinner that takes only minutes to prepare.

Ingredients:
4 boneless, butterfly pork chops
1 tablespoon Adobo seasoning
2 tablespoons oil
1 can black beans, drained and rinsed
1 cup salsa
1 package Lipton mushroom flavored rice
1 can green beans

Instructions:
1. Sprinkle Adobo seasoning on both sides of each pork chop.
2. Heat oil in skillet on medium high heat and add pork chops.
3. In separate skillet, heat black beans and salsa on low heat.
4. While pork chops cook, prepare rice according to package directions and heat green beans in microwave or in small saucepan.
5. Cook pork chops for 6-7 minutes on each side, or until cooked through.
6. Serve pork chops over rice and topped with black bean salsa.
