Description:
Soup with sandwiches is an easy alternative to cooking a large elaborate meal. This simple recipe for a rich potato soup was given to me by a friendĘs mother and has been a favorite ever since!

Ingredients:
3 cups peeled and sliced potatoes
1/2 cup diced celery
1 cup frozen chopped onion
2 teaspoons salt
1 1/2 cups water
3 cups whole milk
1 cup grated cheddar cheese
1 tablespoon butter
1/2 teaspoon pepper
Sliced ham
Sliced bread
Sandwich fixings of your choice
Baby carrots

Instructions:
1. In a large saucepan, combine potatoes, celery, onion and salt with 1 1/2 cups water.
2. Bring to a boil, then cover and simmer for 15 minutes.
3. Mash vegetables slightly in water, add remainder of ingredients and return to boil.
4. Reduce heat and simmer 5 minutes.
5. Serve with ham sandwiches and baby carrots.
